Winemaker Notes
Shorthand for Passe-Tout-Grains, this is our second vintage of this little-known co-ferment of Pinot Noir and Gamay that originated in the Burgundy region of France. The grapes were hand harvested and then destemmed and lightly crushed and allowed to naturally ferment in open top fermenters. The wine was hand punched 2 times daily to extract colour. As soon as the wine was fermented to dryness, it was gently pressed into older French oak barrels and allowed to sit on the lees until bottling for a richer mouthfeel. The wine was bottled unfiltered and unfined in March 2023. Vegan friendly. Minimal SO2 used. The style is fresh and fruit forward with bright acidity.
